This really simple easy recipe of Garlic, Prawn and Asparagus over Courgette Noodles is great for a gluten free/ dairy free lunch or dinner.  It takes only 20 minutes to make and is packed full of nutrients and protein to balance blood sugar.

Garlic, Prawn and Asparagus over Courgette Noodles


1 tbsp coconut oil

1lb asparagus, trimmed and chopped

5 garlic cloves minced

½ tsp sea salt

¼ -1 tsp chilli flakes

¼ tsp freshly ground black pepper

1 lb raw king size prawns peeled and deveined

2 tbsp of lemon juice

2 medium courgette, spiralized into noodles

Fresh chopped coriander


  • Heat oil in a large non-stick frying pan over a medium heat.  Add asparagus, garlic, salt, chilli flakes and black pepper; cook for 2 minutes, stirring frequently.  Add the prawns, and cook for about 4 minutes, stirring frequently.  Stir in lemon juice.  Once the prawns are pink and cooked through, transfer the mixture to a plate and set aside.
  • Add courgette noodles into the same pan and saute for 1-2 minutes, add the prawns and asparagus mixture back into the pan.  Give it a good stir to combine everything, then remove from heat, top with fresh coriander and serve.
